Made from a selection of the best grapes harvested in the traditional manner to obtain the best quality at the reception. Subsequently, a gentle crushing is realized for obtaining a first class free-run juice. The fermentation process and control thereof occurs at low temperature, to facilitate the slow consumption of sugars and thus a higher extraction of aromas and qualities of the variety.
Once the fermentation is finished, the filtration, stabilization and bottling processes are carried out.
